Crock Pot Lentil and Sausage Soup

Ingredients

• 1cup uncooked lentils
• ¹⁄₂lb kielbasa, cut into 1 inch pieces
• 1cup onion, chopped
• 1cup celery, chopped
• 1cup carrot, finely chopped
• 1cup potato, diced
• 2tablespoons chopped fresh parsley
• 3(16 ounce) cans beef broth
• ¹⁄₂teaspoon fresh ground black pepper
• ¹⁄₈teaspoon nutmeg

Steps

1. Rinse lentils and drain.
2. Place all ingredients in crock pot.
3. Cook on low for 6 hours, stirring occasionally.
