Blueberry Pie

There is nothing to beat a fresh blueberry pie. It doesn’t need much: sugar, a bit of cornstarch to thicken all the nice juices and cinnamon.

Ingredients

 

 

34 cup white sugar
4 tbsp corn starch
14 tsp salt
12 tsp ground cinnamon
4 cup fresh blueberries
1 pastry, for a 9 inch double crust pie
1 tbsp butter

Directions

 

  1. Preheat oven to 400 degrees F (205 degrees C).
  2. Mix sugar, corn starch, salt, and cinnamon and sprinkle over blueberries.
  3. Line pie dish with one pie crust. Pour berry mixture into the crust and dot with butter. Cut remaining pastry into 1/2 – 3/4 inch wide strips and make a lattice top. Crimp and flute edges.
  4. Bake for 50 minutes or until the crust is golden brown. Cool for at least 2 hours to set the filling.
