Because it doesn’t lose its shape when cooked, it can be mashed or pureed to make soups, curries and casseroles, or roasted in the oven and served as a side. Also, because the seeds are all contained within the bulb, almost all of the squash can be used and it produces very little waste.
You can even roast the seeds for a nice, light snack.
- While butternut squash is relatively straightforward to peel and cut, a sturdy and well sharpened knife will make chopping your squash less of a hassle.
- Microwaving them for a short time will help loosen and soften the skin, making them much easier to peel.
- Finally, if chopping isn’t your thing, you can also find pre-peeled and pre-chopped butternut squash in the produce aisle at your grocery store.
