I love Whoopie Pies! They are really easy to make. You can also add 1/2 cup raisins, if you like, to the cake ingredients. You can use Walnuts instead of pecans, if you prefer, to roll the finished pies in. The Women’s Fellowship Group at my church recently took a meal to a local hospice home and I made these pies to share. They were a big hit! I hope that you enjoy!
-I made this recipe along with a standard whoopie pie recipe when it was our turn to provide refreshments for our Square Dancing club 2 weeks ago. I found out a lot of people in the south don’t know what a whoopie pie is! Were they ever pleasantly surprised!! The carrot cake ones were the biggest hit, and my m-i-l’s recipe for choc w/vanilla cream filling was a VERY close second!! Everybody wants the recipe. Thank you so much for sharing!!

-Nancy Milton: I haven’t ever used the Duncan Hines Decadent Carrot Cake but I’ve seen it. I feel sure it would be fine but you may want to replace the carrots in the box with a fresh one. I’ve also had someone tell me that they couldn’t find carrot cake mix so they used a spice cake mix. I hope you like the pies!
