Ingredients:
1 1/2 cups cherries from cherry pie filling
1 tablespoon cinnamon
2 to 3 tablespoons sugar
1 teaspoon vanilla extract
1 tablespoon vegetable oil
6 (8-inch) soft flour tortillas
8 oz cream cheese
Instructions:
Preheat oven to 375°F (190°C).
In a medium bowl, mix together the cherries, cinnamon, sugar, and vanilla extract.
On a clean work surface, lay out the flour tortillas. Spread 2 to 3 tablespoons of cream cheese evenly on each tortilla. Spoon a few tablespoons of the cherry mixture onto the cream cheese on one half of each tortilla.
Fold the tortilla over, sealing the edges to create a chimichanga.
Heat the vegetable oil in a large skillet over medium heat. Once the oil is hot, add the chimichangas and cook until golden brown, about 3 minutes on each side.
Place the chimichangas on a baking sheet and bake in the oven for 10 to 12 minutes, or until heated through and the edges are crispy.
Serve the chimichangas hot with additional cherry pie filling and whipped cream, if desired. Enjoy!
