Ingredients
1⁄4 cup oil |
1 cup onion, chopped |
14 oz can diced tomatoes |
2 cup chicken broth |
1 tsp garlic, minced |
1 tsp thyme |
1 bay leaf |
1 tsp salt |
1⁄2 tsp black pepper |
4 cup potato, diced |
1 1⁄2 cup carrot, sliced |
2 cup boneless, skinless chicken breast, chopped into 1 inch pieces |
Directions
- Heat oil in large pot, saute onions for 2 minutes.
- Add next 7 ingredients.
- Bring to a boil.
- Add potatoes, carrots, and chicken.
- Simmer until vegetables are done, about 30 minutes.
- Thicken with cornstarch if you like a thicker stew.
