This Easy Cowboy Salad with the original name of Cowboy Caviar or Texas Caviar is good for you, full of flavor and easy to prepare thanks to the cans. Feel free to serve it as is or with crunchy tortillas. Originally, the cowboy dish is very spicy, but you can adjust the amount of chili to taste.
Black beans absorb other flavors superbly, so try to leave this for at least 20 minutes before serving to allow the different flavors to blend together.
Easy Cowboy Salad
Ingredients :
- 425gm-black, kidney OR black-eyed kidney beans, wash & drain
- 425g sweet corn
- 1/2 onion (red), peeled and thinly sliced
- 1 bell-pepper (red or yellow), seeded & diced° 1 jalapeno, chopped and seeded (or 3 sprinkles ground cayenne pepper)
- 3 tomatoes cut into cubes
- 1/4 bunch chopped fresh coriander
- Salt and pepper from the grinder
- 3 tablespoons of apple cider vinegar or lemon juice
- 4 tablespoons olive oil *
Instructions :
In a bowl, mix all ingredients. Cover with plastic wrap and leave for an hour in the refrigerator before serving.
