- 1 lb sweet Italian sausage
- 2 tbsp olive oil
- 1 large onion, diced
- 3 garlic cloves, minced
- 6 cups chicken broth
- 1 cup heavy cream
- 1 1/2 cups ditalini pasta
- 1 tsp oregano
- 1 tsp basil
- 1/2 tsp red pepper flakes (optional)
- Salt and pepper
- 4 cups spinach, chopped
- 1 cup Parmesan cheese, grated (+ extra for garnish)
- Fresh parsley, chopped (garnish)
Directions:
- Brown sausage, remove and set aside.
- Sauté onion and garlic in olive oil.
- Add broth, cream, oregano, basil, salt, and pepper. Bring to a boil, then simmer.
- Cook pasta in broth until al dente.
- Add sausage and spinach, cook until wilted.
- Stir in Parmesan until melted.
- Serve with extra Parmesan and parsley.
- Servings: 6-8
