Creamy Parmesan Italian Sausage Soup

Ingredients:

 
  • 1 lb sweet Italian sausage
  • 2 tbsp olive oil
  • 1 large onion, diced
  • 3 garlic cloves, minced
  • 6 cups chicken broth
  • 1 cup heavy cream
  • 1 1/2 cups ditalini pasta
  • 1 tsp oregano
  • 1 tsp basil
  • 1/2 tsp red pepper flakes (optional)
  • Salt and pepper
  • 4 cups spinach, chopped
  • 1 cup Parmesan cheese, grated (+ extra for garnish)
  • Fresh parsley, chopped (garnish)

Directions:

 
  • Brown sausage, remove and set aside.
  • Sauté onion and garlic in olive oil.
  • Add broth, cream, oregano, basil, salt, and pepper. Bring to a boil, then simmer.
  • Cook pasta in broth until al dente.
  • Add sausage and spinach, cook until wilted.
  • Stir in Parmesan until melted.
  • Serve with extra Parmesan and parsley.
  • Servings: 6-8
