Ingredients:

  • Fries:
    • 4 large russet potatoes
    • 2-3 tablespoons olive oil
    • 1 teaspoon garlic powder
    • 1 teaspoon paprika
    • Salt and pepper to taste
  • Cheese Topping:
    • 1 cup shredded cheddar cheese
    • 1/2 cup shredded mozzarella cheese
    • Optional toppings: chopped green onions, crumbled bacon, jalapeños, or sour cream

  • Parchment paper
  • Mixing bowl

Instructions:

  1. Preheat Oven and Prepare Baking Sheet:
    • Preheat your oven to 425°F (220°C).
    • Line a baking sheet with parchment paper.
  2. Prepare the Potatoes:
    • Wash and dry the potatoes. Cut them into strips, approximately 1/4 inch wide, to create fries. You can peel them if you prefer, but leaving the skins on provides extra texture and nutrients.
    • In a large bowl, toss the potato strips with olive oil, garlic powder, paprika, salt, and pepper until evenly coated.
  3. Bake the Fries:
    • Spread the fries in a single layer on the prepared baking sheet. Ensure they are not overcrowded to help them become crispy.
    • Bake in the preheated oven for 25-30 minutes, turning them halfway through the cooking time, until golden and crisp.
  4. Add Cheese:
    • Sprinkle the shredded cheddar and mozzarella cheese over the hot fries straight out of the oven. The heat from the fries will melt the cheese. If you want the cheese to be more melted, you can return the fries to the oven for an additional 5 minutes or until the cheese is bubbly and slightly golden.
  5. Add Optional Toppings:
    • If desired, top the cheesy fries with chopped green onions, crumbled bacon, sliced jalapeños, or a dollop of sour cream for added flavor and texture.
