Enchiladas are one of my favorite meals. They’re one of the first things that I ever learned how to cook. I make a mean pork verde enchilada. Mmmm! That being said, enchis can take a while to make with all of the preparing each individual little burrito.
This enchilada casserole on the next page has all of the ingredients of an enchilada, but without all of the work! In fact, I have had a variation of this, and I must say that it is really, really good! The best part about this recipe? It’s only 4 ingredients! YES!
I have never had an enchilada in a restaurant. I have only ever had them homemade. This is mainly because I thought that I hated Mexican food up until just a few years ago, and even so, I’m still pretty picky. If there are beans, I’m not touching it. My mom started me off on enchiladas after I was an adult. In fact, I only ate them because she promised me that there was nothing I didn’t like in them. I’m still a picky eater. She was right! They were fantastic!!!
