Ingredients
- 4 tilapia fillets, cut into strips and halved (if fillets are thick slice them in half like a book)
- 1 cup flour
- 1 tsp salt
- 1 tsp pepper
- 1 tsp cumin
- 1 tsp coriander
- 2 egg whites, beaten
- 1 cup beer
- 1/4 cup coconut oil or vegetable oil
- corn tortillas
- Red Cabbage Slaw
Instructions
- pat fish dry on paper towel
- combine flour, salt, pepper, cumin, and coriander in a medium sized bowl
- stir in egg whites
- whisk in the beer and let it sit for 30 minutes
- heat the oil in a large skillet over medium high heat (test by dropping a tiny bit of beer batter, when it sizzles it’s ready)
- dip the piece of fish in the beer batter and allow the extra to drip off
- place in the hot oil, cooking just a few at a time
- cook for 2-3 min on one side then flip when golden brown
- allow the other side to cook and become golden as well
- remove and set on paper towels
- warm tortillas and place slaw on the tortilla and a piece of fish on top
- enjoy!
