For my mother’s 70th birthday and Mother’s Day, I made two of these strawberry pies instead of a cake. Since it was mid-May in Texas, the berries were absolutely perfect. It was a memorable occasion for the whole family.

loose enough so a couple stray strawberries fall out out onto the plate.
It’s not perfect — we love that. Not to mention, those stray strawberries are perfect for swiping through some lightly whipped cream.
To Make this Recipe You’Il Need the following ingredients:
- 1 9-inch pie crust, baked
- 1 quart fresh strawberries
- 1 cup white sugar
- 3 tablespoons cornstarch
- 3/4 cup water
- 1/2 cup heavy whipping cream (because you can’t buy whipped cream for a homemade pie!)
- 2 tablespoons white sugar
