Sautรฉ your mushrooms with garlic, butter, parsley & season to taste ( I add spinach in sometimes too) make a slit in your chicken breasts season your chicken to your liking, I use creole seasoning, garlic powder, salt/pepper & some cayenne pepper, stuff your chicken with mozzarella cheese put your mushroom mixture in & add some shredded parm on top of the mushrooms, seal breasts with toothpicks, sear both sides in a pan first then put them in the oven for about 20-30 minutes til theyโre cooked through, take chicken out of pan, add some butter & garlic to the pan, once butter melts add some flour, make a roux, then add some chicken broth & heavy cream, cook that for a couple mins, then add in some parm cheese to the sauce & season your sauce. Add chicken back to pan & done. I served mine with wild rice & asparagus but it would probably be really good with mashed potatoes too.
