  • Potatoes: 1.5 pounds, cut into 1-inch pieces (Yukon gold or red potatoes work well)

  • Garlic: 6-8 cloves, minced
  • Lemon Juice: 2 tablespoons (optional)
  • Fresh Rosemary or Thyme: 2-3 sprigs (or 1 teaspoon dried herbs)
