While buying this slab of meat earlier this week, I came to realize how I look at money and food is interesting. That hunk of meat was about $8, which just feels like a lot to spend on one item. Then I realized that this hunk of meat will last 2 meals for us. That’s 4 servings. That’s about $2 per serving just for the meat, and then I splurged on the brussels, and the potatoes were less than a dollar. Really this is like a $15 meal that lasts 2 meals or 4 servings. The thought passed through my mind that for like $5 more I could just not cook, and we could go out, but that’s only for 1 meal. I’m working on retraining my thoughts about food and money.
I know my mom was glad that I made this recipe because she gave me an Instant Pot (IP) back in August. It is now February, and this is the first time that I have used my IP. It’s an amazing and cool pressure cooker. You can find them here at Amazon. They’re only $80 for the version I have, but they go on sale often. It’s the newest cooking trend hitting the nation. Now that I have finally used mine, I get why. It is really simple to use. My corned beef was cooked in just 60 minutes instead o 3-6 hours. It came out perfectly!
