Kerala Chicken Dry Roast

Ingredients

  • Chicken Fillet 500 garam
  • 3 tbls Oil –
  • 5 to 10 Curry leaves
  • 2 sliced Red chillies
  • 2 red onion – cut into smal cubes
  • 1 tbls Garlic paste –
  • 1 tbls Ginger –
  • 2 tbl Kashmiri chili powder –
  • 1 tbls Coriander powder –
  • 1/2 tbls Garam masala –
  • 1/2 tsp Turmeric powder
  • to taste Black pepper –
  • to taste Salt
  • 1/2 tsp Lemon squeeze –
  • 1 small stick Cinnamon –
  • 4 Cloves of garlic
  • 2 Star anise –
  • 4 Cardamom –
  • 1 handfull Coconut slices

Steps

  1. Heat 3 tbs oil in pan on medium heat and add cinnamon,clove, star anise, cardamom and curry leaves. Add in onion. Stir and cook until onion turn slightly brown. Add in garlic and ginger paste.
  2. Once the mixture begins to turn brown, add chicken and coconut slices. Stir well. Add in all spices.
  3. Stir and coat the chicken with the mixture and simmer for about 20 minutes or until done. Stir occasionally.
  4. Add salt and lemon juice. Stir well. Cook for 5 more minutes.

Chicken With Cashews

Ingredients

  • 500 grams Boneless chicken
  • 1 cup Capsicum chopped
  • 1/2 cup Cashews (dry roasted and roughly chopped)
  • 1/2 cup Cashews (grind with little water and make paste)
  • 8 pieces Green chillies
  • 1 tbsp Red chillies powder
  • 1 tsp Turmeric powder
  • Salt as per taste
  • 1/2 cup Oil
  • 1 tsp Cumin powder
  • 1 tsp Cumin seeds
  • 1 cup Onion chopped
  • 1/2 cup Tomatoes chopped

Steps

  1. Heat oil in a pot, add onion and fry till translucent then add cumin seeds and tomatoes, cook till it softens
  2. Now add all spices, ginger garlic paste and cashews paste and cook for about 5-10 mins with adding water in between
  3. Now add boneless chicken small cubed and cook till it tenders
  4. Now add chopped capsicum, green chillies chopped and chopped cashews and cook for 2-4 mins. Capsicum should remain crunchy
  5. Serve with garlic rice
