⢠3 medium cucumbers, peeled and sliced
⢠1 medium onion, sliced into rings
⢠3 medium tomatoes, cut into wedges
⢠1/2 cup vinegar
⢠1/4 cup sugar
⢠1 cup water
⢠2 tsp salt
⢠1 tsp black pepper
⢠1/4 cup oil
⢠1 tsp chopped fresh mint (optional)
Instructions:
Slice cucumbers, onions, and tomatoes, then toss them in a bowl. In a separate bowl, mix vinegar, sugar, water, salt, pepper, and oil until the sugar dissolves. Pour the marinade over the veggies, give it a good toss, and let it chill in the fridge for at least 2 hours (overnight for extra flavor!).
