MILK BRIOCHE ROLLS

Ingredients:

  • 1 cup warm milk (110-115°F)
  • 2 1/4 teaspoons (1 packet) active dry yeast
  • 1/4 cup granulated sugar
  • 4 cups all-purpose flour
  • 1 teaspoon salt
  • 3 large eggs
  • 1/2 cup unsalted butter, softened

Instructions:

  1. In a small bowl, combine the warm milk, yeast, and a pinch of sugar. Let it sit for about 5-10 minutes until frothy.
  2. In a large mixing bowl or the bowl of a stand mixer fitted with a dough hook attachment, combine the flour, sugar, and salt.
  3. Add the frothy yeast mixture and eggs to the dry ingredients. Mix until a rough dough forms.
  4. Add the softened butter, one tablespoon at a time, mixing well after each addition, until all the butter is incorporated.
  5. Knead the dough for about 8-10 minutes, either by hand on a floured surface or using the stand mixer, until the dough is smooth and elastic.
  6. Place the dough in a greased bowl, cover with plastic wrap or a clean kitchen towel, and let it rise in a warm place for about 1-2 hours, or until doubled in size.
  7. Punch down the risen dough and turn it out onto a lightly floured surface. Divide the dough into equal-sized pieces and shape each into a ball.
  8. Place the shaped rolls on a baking sheet lined with parchment paper, leaving some space between them to rise.
  9. Cover the rolls loosely with plastic wrap or a clean kitchen towel and let them rise for another 30-45 minutes, or until they have doubled in size.
  10. Preheat your oven to 375°F (190°C).
  11. Bake the rolls in the preheated oven for about 15-20 minutes, or until they are golden brown on top and sound hollow when tapped on the bottom.
  12. Remove the rolls from the oven and let them cool on a wire rack before serving.
