Ingredients
- 1 pound boneless chicken breast, cut into small strips
- 1 (16oz.) box linguini
- 5 ounces matchstick carrots
- 1 red bell pepper, julienned
- 8 ounces mushrooms, pre-sliced
- 4 green onions, sliced into 1-inch strips on an angle
- 3 large cloves garlic, minced
- 2/3 cup reduced-sodium soy sauce
- 1 teaspoon corn starch
- 1 box Swanson 100% Natural Chicken Broth
- 2 tablespoons olive oil
- 1 can bamboo shoots, drained
- 1 can chopped water chestnuts, drained
Instructions
Chop the chicken into strips and julienne the red pepper, and mince the garlic cloves.
Place all the ingredients in a large stock pot.
Cook all the ingredients on high until it starts to boil.
Cover and simmer on medium heat for 15 minutes occasionally stirring the pot.
Take off the heat after 15 minutes of simmering and let sit uncovered for 5 minute before serving.
