Ingredients:
- Mashed potatoes (homemade or store-bought)
- 1 lb ground beef
- 1 onion, diced
- Mixed vegetables (frozen or fresh)
- Brown gravy mix or prepared brown gravy
- Shredded cheese (cheddar or your preferred type)
- Salt and pepper to taste
- Olive oil or cooking spray for greasing
Instructions:
- Preheat your oven to 375°F (190°C). Grease a baking dish with olive oil or cooking spray.
- Prepare the mashed potatoes if you’re making them from scratch. If using store-bought mashed potatoes, skip to step 3.
- Spread the mashed potatoes evenly on the bottom of the greased baking dish, forming the bottom layer.
- In a skillet, cook the ground beef and diced onion over medium heat until the beef is browned and the onion is softened. Drain any excess grease.
- Add the mixed vegetables to the skillet with the cooked beef and onion. Cook until the vegetables are heated through. Season with salt and pepper to taste.
- Spread the beef and vegetable mixture evenly over the mashed potatoes, creating the middle layer.
- Prepare the brown gravy according to package instructions or use prepared brown gravy.
- Pour the brown gravy over the beef and vegetable layer, covering it completely.
- Sprinkle shredded cheese evenly over the top of the gravy layer.
- Place the baking dish in the preheated oven and bake for about 25-30 minutes, or until the cheese is melted and bubbly.
- Once done, remove the reverse shepherd’s pie from the oven and let it cool for a few minutes before serving.
- Serve hot, and if desired, drizzle additional brown gravy on top before serving.
