Ingredients:
- 4 boneless, skinless chicken breasts
- 8 slices fresh mozzarella
- 8 slices Genoa salami
- 8 slices pepperoni
- 8 slices hard salami
- 1 cup marinara sauce
- 1 cup shredded Italian cheese blend (mozzarella, Parmesan, provolone)
- 1/2 cup sliced pepperoni (for topping)
- 2 tablespoons olive oil
- Salt and black pepper, to taste
- 1 teaspoon dried oregano
- 1 teaspoon garlic powder
- Fresh basil or parsley for garnish (optional)
Instructions:
- Preheat the Oven:
- Preheat your oven to 375°F (190°C).
- Prepare the Chicken:
- Lay each chicken breast flat on a cutting board and use a sharp knife to cut a pocket into the thickest side of the breast. Be careful not to cut all the way through.
- Stuff the Chicken:
- Season the inside of each chicken breast with salt, black pepper, dried oregano, and garlic powder.
- Stuff each pocket with 2 slices of fresh mozzarella, 2 slices of Genoa salami, 2 slices of pepperoni, and 2 slices of hard salami.
- Secure with Toothpicks:
- Secure the stuffed chicken breasts with toothpicks to prevent the stuffing from falling out during cooking.
- Sear the Chicken:
- Heat olive oil in an oven-safe skillet over medium-high heat. Sear the stuffed chicken breasts for 2-3 minutes on each side until they develop a golden-brown crust.
- Add Sauce and Cheese:
- Pour marinara sauce over the stuffed chicken breasts in the skillet. Sprinkle the shredded Italian cheese blend over the top.
- Bake in the Oven:
- Transfer the skillet to the preheated oven and bake for 20-25 minutes or until the chicken is cooked through, and the cheese is melted and bubbly.
- Top with Pepperoni:
- In the last 5 minutes of baking, arrange sliced pepperoni on top of each stuffed chicken breast for an extra flavorful and crispy topping.
- Serve:
- Carefully remove toothpicks before serving. Garnish with fresh basil or parsley if desired.
