Stuffed Chicken

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 8 slices fresh mozzarella
  • 8 slices Genoa salami
  • 8 slices pepperoni
  • 8 slices hard salami
  • 1 cup marinara sauce
  • 1 cup shredded Italian cheese blend (mozzarella, Parmesan, provolone)
  • 1/2 cup sliced pepperoni (for topping)
  • 2 tablespoons olive oil
  • Salt and black pepper, to taste
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • Fresh basil or parsley for garnish (optional)

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 375°F (190°C).
  2. Prepare the Chicken:
    • Lay each chicken breast flat on a cutting board and use a sharp knife to cut a pocket into the thickest side of the breast. Be careful not to cut all the way through.
  3. Stuff the Chicken:
    • Season the inside of each chicken breast with salt, black pepper, dried oregano, and garlic powder.
    • Stuff each pocket with 2 slices of fresh mozzarella, 2 slices of Genoa salami, 2 slices of pepperoni, and 2 slices of hard salami.
  4. Secure with Toothpicks:
    • Secure the stuffed chicken breasts with toothpicks to prevent the stuffing from falling out during cooking.
  5. Sear the Chicken:
    • Heat olive oil in an oven-safe skillet over medium-high heat. Sear the stuffed chicken breasts for 2-3 minutes on each side until they develop a golden-brown crust.
  6. Add Sauce and Cheese:
    • Pour marinara sauce over the stuffed chicken breasts in the skillet. Sprinkle the shredded Italian cheese blend over the top.
  7. Bake in the Oven:
    • Transfer the skillet to the preheated oven and bake for 20-25 minutes or until the chicken is cooked through, and the cheese is melted and bubbly.
  8. Top with Pepperoni:
    • In the last 5 minutes of baking, arrange sliced pepperoni on top of each stuffed chicken breast for an extra flavorful and crispy topping.
  9. Serve:
    • Carefully remove toothpicks before serving. Garnish with fresh basil or parsley if desired.
  10. Enjoy:
