I substituted ground sausage for the ground beef in the recipe, eliminated the green peppers and doubled the green chiles.

Tex Mex Ground Beef Chili Macaroni Casserole

Ingredients

 

1 lb ground beef
1 tsp (up to 2) red pepper flakes, or to taste, optional
1 onion, chopped
2 tbsp garlic, minced
1 green bell pepper, chopped
2 package (1 oz each) taco seasoning mix, or 1 pkg for milder flavor
13 cup parmesan cheese, grated, plus more for topping, optional
8 slice bacon, cooked and chopped
1 can (8 oz) tomato sauce
2 can (10.75 oz each) condensed tomato soup
1 tbsp (up to 2) brown sugar, optional
1 regular or seasoned salt, to taste
1 black pepper, to taste
3 cup macaroni, cook to al dente
4 cup shredded Mexican blend cheese, divided

Directions

  1. Add ground beef, red pepper flakes (if using), onion, garlic, and green bell pepper to a large skillet and cook for about 10-12 minutes or until the beef is no longer pink. Drain any fat. Stir in taco seasoning mix and 1/3 cup parmesan cheese and cook for 1 minute. Mix in bacon, tomato sauce, tomato soup, and brown sugar (if using). Simmer for 30-40 minutes, stirring occasionally. Season to taste with salt and black pepper. Stir in 2 cups Mexican blend cheese. Add macaroni and mix well to combine.
  2. Preheat oven to 350 degrees F (175 degrees C). Grease a 13 x 9 inch baking dish.
  3. Transfer the mixture to the prepared baking dish. Sprinkle with grated parmesan cheese, if desired, and remaining 2 cups Mexican blend cheese.
  4. Bake uncovered for about 20 minutes or until bubbly and the cheese has melted.
