1 lb ground beef |
1 tsp (up to 2) red pepper flakes, or to taste, optional |
1 onion, chopped |
2 tbsp garlic, minced |
1 green bell pepper, chopped |
2 package (1 oz each) taco seasoning mix, or 1 pkg for milder flavor |
1⁄3 cup parmesan cheese, grated, plus more for topping, optional |
8 slice bacon, cooked and chopped |
1 can (8 oz) tomato sauce |
2 can (10.75 oz each) condensed tomato soup |
1 tbsp (up to 2) brown sugar, optional |
1 regular or seasoned salt, to taste |
1 black pepper, to taste |
3 cup macaroni, cook to al dente |
4 cup shredded Mexican blend cheese, divided |
Directions
- Add ground beef, red pepper flakes (if using), onion, garlic, and green bell pepper to a large skillet and cook for about 10-12 minutes or until the beef is no longer pink. Drain any fat. Stir in taco seasoning mix and 1/3 cup parmesan cheese and cook for 1 minute. Mix in bacon, tomato sauce, tomato soup, and brown sugar (if using). Simmer for 30-40 minutes, stirring occasionally. Season to taste with salt and black pepper. Stir in 2 cups Mexican blend cheese. Add macaroni and mix well to combine.
- Preheat oven to 350 degrees F (175 degrees C). Grease a 13 x 9 inch baking dish.
- Transfer the mixture to the prepared baking dish. Sprinkle with grated parmesan cheese, if desired, and remaining 2 cups Mexican blend cheese.
- Bake uncovered for about 20 minutes or until bubbly and the cheese has melted.
