Ingredients:
- 1 medium head of cabbage, shredded
- 2 large carrots, grated
- 1 red bell pepper, sliced thinly
- 3-4 garlic cloves, sliced
- 1 lemon, sliced into rounds
- 4 cups water
- 1 cup white vinegar
- 1/2 cup sugar
- 2 tablespoons salt
- 1 teaspoon black peppercorns
- 1 bay leaf
Instructions:
1. Prepare the Vegetables:
โข In a large bowl, combine the shredded cabbage, grated carrots, and sliced red bell pepper. Mix them well.
2. Pack the Jars:
โข Sterilize your mason jars by boiling them in water for 10 minutes or running them through the dishwasher.
โข Pack the vegetable mixture into the sterilized jars tightly.
โข Add a few slices of garlic and one or two lemon slices to each jar.
3. Make the Brine:
โข In a medium saucepan, combine the water, white vinegar, sugar, salt, black peppercorns, and bay leaf. Bring the mixture to a boil, stirring to dissolve the sugar and salt.
โข Remove the brine from heat and let it cool slightly.
4. Pour the Brine:
โข Carefully pour the hot brine over the packed vegetables in the jars, making sure the vegetables are fully submerged. Leave about 1/2 inch of headspace at the top of each jar.
โข Tap the jars gently on the counter to release any trapped air bubbles.
5. Seal the Jars:
โข Wipe the rims of the jars with a clean cloth to ensure a good seal.
โขPlace the lids on the jars and screw on the bands until they are fingertip tight.
6. Pickling Process:
โขLet the jars cool to room temperature, then store them in the refrigerator.
โขAllow the cabbage to pickle for at least 24 hours before consuming for the best flavor. The flavor will continue to develop over time.
7. Enjoy:
โข Serve your pickled cabbage as a side dish, in sandwiches, or as a topping for tacos and burgers.
