Bacon Wrapped Chicken Meatloaf

This bacon wrapped chicken meatloaf is an easy, flavorful recipe everyone will love. It is moist and juicy on the inside, thanks to stringy cheese filling. This stuffed chicken meatloaf is also crispy on the outside as it is wrapped in bacon.

Super easy to make, you just need to combine the ground chicken with eggs, breadcrumbs and seasoning. Add the cheese filling and slowly roll the meatloaf first to seal in the filling and then in the bacon to make it super crispy on top once it is baked in the oven.

Bacon Wrapped Chicken Meatloaf

Ingredients:

8 Rashers of thin streaky bacon

500g chicken mince

1 egg

2 cups fresh bread crumbs

1 small onion, diced

1 clove garlic, crushed

1/3 cup parsley, chopped

485g Chicken Tonight Honey & Mustard Simmer Sauce Mashed potatoes and broccolini,

Direction :

  1. Preheat oven 190°C
  2. Line a 12 x 22cm greased loaf tin with bacon, overlapping to cover base
  3. Combine all of the remaining ingredients in a medium bowl (excluding Simmer Sauce)
  4. Add 1 cup of Honey Mustard Simmer Sauce and mix well
  5. Press firmly into prepared tin. Cover with foil and bake for 40 minutes, then uncover for the last 10 minutes
  6. Remove from oven, allow to cool for 5 minutes before inverting onto a chopping board
  7. Slice thickly and serve with warmed remaining Simmer Sauce, creamy mash and broccolini
  8. Serve with Mount Franklin water
