Baked Cauliflower Mini Muffin Tots


*12 ounce bag riced cauliflower
defrosted and squeezed dry!
*3/4 cup shredded low-fat cheese
use what you like Points vary
The cheese pictured is 9 points for that serving.
*1 egg
*1/4 cup ground oats 2 points
*1 small onion chopped
*1 tsp kosher salt
*few grinds black pepper
*1/2 tsp tumeric


pray a mini muffin tin with cooking oil (make sure to get the sides too )
Sauté chopped onion with a few sprays of oil and let cool.
Combine all of the ingredients and the cooled onions together in a bowl. I like to use a fork.
Using a scoop or spoon divide the mixture between the (24) muffin cups and press down firmly into the cups.
Bake at 400 degrees for 20-25 mins or until golden brown.
Allow to cool slightly and run a knife along the edges to loosen before popping out
