Ingredients:

  • 4 salmon fillets (about 6 ounces each), skinless or skin-on
  • 1 bunch asparagus, tough ends trimmed
  • Salt and pepper, to taste
  • 2 tablespoons olive oil

For the lemon garlic butter sauce:

  • 1/4 cup unsalted butter, melted
  • 4 cloves garlic, minced
  • Zest of 1 lemon
  • Juice of 1 lemon
  • 2 tablespoons chopped fresh parsley
  • Salt and pepper, to taste

Instructions:

  1. Preheat the oven: Preheat your oven to 400°F (200°C).
  2. Prepare the salmon and asparagus: Place each salmon fillet on a piece of aluminum foil large enough to fold over and seal. Season the salmon with salt and pepper. Arrange a handful of asparagus spears next to each salmon fillet. Drizzle the salmon and asparagus with olive oil.
  3. Fold the foil packets: Fold the sides of the foil over the salmon and asparagus, covering completely and sealing the packets closed.
  4. Bake the salmon: Place the foil packets on a baking sheet and bake in the preheated oven for 12-15 minutes, depending on the thickness of the salmon fillets, or until the salmon is cooked through and flakes easily with a fork.
  5. Make the lemon garlic butter sauce: While the salmon is baking, prepare the lemon garlic butter sauce. In a small saucepan, melt the butter over medium heat. Add the minced garlic and cook for 1-2 minutes until fragrant. Stir in the lemon zest, lemon juice, and chopped parsley. Season with salt and pepper to taste. Remove from heat.
  6. Serve: Carefully open the foil packets and transfer the salmon and asparagus to serving plates. Drizzle the lemon garlic butter sauce over the salmon and asparagus. Serve immediately.
