Blueberry Zucchini Bread

Ingredients:
• 2 cups shredded zucchini (moisture squeezed out)
• 2 eggs
• ½ cup vegetable oil
• ¾ cup sugar
• 1 tsp vanilla extract
• 1½ cups all-purpose flour
• ½ tsp baking powder
• ½ tsp baking soda
• ½ tsp cinnamon
• ¼ tsp salt
• 1 cup fresh or frozen blueberries (tossed in a little flour)

Direction :
Preheat oven to 350°F (175°C). Grease a loaf pan.
In a bowl, whisk together eggs, oil, sugar, and vanilla.
Stir in zucchini.
In another bowl, combine dry ingredients.
Add dry to wet, then gently fold in blueberries.
Pour into pan and bake 50–60 min, or until a toothpick comes out clean.
Cool before slicing.
