INGREDIENTS:
– TO MAKE THE MUFFINS:
*1+1/2 C.Of + 1 tablespoon All purpose flour
* 1+1/2 C.Of diced peeled apples. About 3 medium apples.
* 1/2 C.Of Granulated sugar.
* 1/2 C.Of Almond Milk.
* 6 TBSP.Of -softened-Unsalted Butter.
* 1+1/2 TSP.Of Baking powder
* 1/4 TSP.Of Ground Nutmeg.
* 1/4 TSP.Of Cinnamon powder.
* 1 TSP.Of Vanilla extract.
* A pinch of Salt.
* An Egg.
– TO MAKE THE TOPPING:
* 2 TSP.Of Cinnamon powder.
* 2/3 C.Of Brown sugar.
* 1/2 C.Of -melted -unsalted butter.
DIRECTONS:
TO MAKE THE MUFFINS-
Preheat the 350-degree oven. Grease the muffin pan or just spray a cooking spray.
Mix together the flour, baking powder, nutmeg, and salt in a medium dish. Set
aside.
In a medium bowl, combine the apples, 1 tablespoon of flour, and 1/4 teaspoon of cinnamon. Toss on the coat.
Beat the butter with the granulated sugar in a large bowl until light and fluffy. Then add an egg and beat until mixed, then add in the vanilla and mix again In the vanilla mix. When steadily adding dry ingredients and milk, beat at low speeds. Fold the apples in.
Scoop the mixture into a muffin tin that you prepared and bake for 30 minutes.
Mix brown sugar with cinnamon powder. In the melting butter, dip the muffins, rinse, and brush in the sugar and cinnamon mixture until they are fully covered.
