Ingredients:

Method:

  1. Preparation:
    • Preheat the oven to 350°F (175°C).
    • Line a baking tray with parchment paper and set aside.
    • Ensure that all the ingredients are at room temperature.

    • In a pan over medium-low heat, dry roast the semolina (sooji) until it turns light golden brown and emits a nutty aroma. This should take about 4-5 minutes. Stir constantly to avoid burning. Transfer the roasted sooji to a plate to cool.

    • In a large mixing bowl, combine the roasted semolina, desiccated coconut, all-purpose flour, powdered sugar, cardamom powder, and a pinch of salt. Mix well to ensure even distribution of ingredients.
  4. Adding Wet Ingredients:
    • In a small saucepan, heat the ghee until it melts. Remove from heat and allow it to cool slightly.

  6. Shaping Alphajors:

    • Press an almond or cashew gently on top of each disc for garnishing.
