Ingredients:
- 1 cup desiccated coconut
- 1/2 cup semolina (sooji)
- 1/2 cup all-purpose flour
- 1/2 cup powdered sugar
- 1/4 teaspoon cardamom powder
- A pinch of salt
- 1/4 cup ghee (clarified butter)
- 1/4 cup milk
- 20 whole almonds or cashews for garnishing
Method:
- Preparation:
- Preheat the oven to 350°F (175°C).
- Line a baking tray with parchment paper and set aside.
- Ensure that all the ingredients are at room temperature.
- Dry Roasting:
- In a pan over medium-low heat, dry roast the semolina (sooji) until it turns light golden brown and emits a nutty aroma. This should take about 4-5 minutes. Stir constantly to avoid burning. Transfer the roasted sooji to a plate to cool.
- Mixing the Dry Ingredients:
- In a large mixing bowl, combine the roasted semolina, desiccated coconut, all-purpose flour, powdered sugar, cardamom powder, and a pinch of salt. Mix well to ensure even distribution of ingredients.
- Adding Wet Ingredients:
- In a small saucepan, heat the ghee until it melts. Remove from heat and allow it to cool slightly.
- Add the melted ghee to the dry ingredient mixture. Mix using your fingers until the mixture resembles coarse breadcrumbs.
- Forming the Dough:
- Gradually add milk, a little at a time, while kneading the mixture to form a soft dough. The dough should hold together when pressed but not be overly sticky.
- Shaping Alphajors:
- Take small portions of the dough and roll them into smooth balls. Flatten each ball slightly to form a disc shape.
- Press an almond or cashew gently on top of each disc for garnishing.
- Baking:
- Place the shaped Alphajors on the prepared baking tray, leaving some space between each.
- Bake in the preheated oven for about 15-18 minutes, or until the bottoms turn golden brown.
- Cooling and Serving:
- Once baked, remove the Alphajors from the oven and let them cool on the baking tray for a few minutes.
- Transfer the Alphajors to a wire rack and allow them to cool completely before storing in an airtight container.
