Ingredients
- 1 pound Thick Cut Bacon
- 1 Small White Onion – chopped
- 2 Cups Pulled Pork
- 2 Cups Organic Ketchup
- 1/4 Cup Water
- 1 teaspoon Garlic Powder
- 1/2 teaspoon Ground Pepper
- 1/4 Cup Brown Sugar
- 2 Tablespoons Apple Cider Vinegar
- 2 teaspoons Worcestershire Sauce
- 1 Tablespoon Yellow Mustard
- 1 Tablespoon Dark Molasses
- 1/2 teaspoon Tabasco Sauce, or more for spicy beans
- 2 Cans Red Kidney Beans – drained/rinsed, 15 oz
- 1 Can White Beans – drained/rinsed, 15 oz
- 1 Can Pinto Beans – drained/rinsed, 15 oz
Instructions
- Preheat oven to 350ยฐF
- Mix ketchup, water, garlic powder, pepper, brown sugar, vinegar, Worcestershire sauce, mustard, molasses and Tabasco. Set aside.
- In large pot; fry bacon until firm but not crisp. Transfer from pot to plate lined with paper towels. Leave bacon grease in pot. Roughly chop bacon into bite sized pieces.
- Add chopped onions to pot with bacon grease. Cook over medium heat while stirring for 2-3 minutes or until onions are translucent.
- Stir in pulled pork and reduce heat to medium/low.
- Add beans, premixed sauce and half of the cooked bacon. Stir while cooking for 5 minutes.
- Transfer to large casserole dish, top with remaining bacon and cover with foil.
- Bake for 30 minutes. Remove foil and bake uncovered for 20 more minutes.
