Easy Italian Creamy Tortellini Soup Recipe

Creamy tortellini soup with tender tortellini, fresh cabbage, and Italian sausage. Delicious and easy tortellini soup prepared in just 30 minutes.

Ingredients:

  • 1 lb mild Italian sausage
  • 2 cloves garlic, minced
  • 1 medium yellow onion, diced
  • 1 tsp salt, adjust to taste
  • 6 cups chicken broth
  • 6 oz tomato sauce
  • 12 oz refrigerated cheese tortellini
  • Bunch kale, chopped
  • 1/2 cup heavy cream

Instructions:

  1. Heat a heavy, deep saucepan over a medium heat. Cook the Italian sausage until it
    turns light brown.
  2. Add the chopped onion and cook for 5 minutes until softened. Add the crushed garlic
    and season with salt to taste
  3. Add chicken broth and tomato sauce. Simmer for 15 minutes.
  4. Add the tortellini and simmer for 5 minutes. You may to adjust the cooking time
    depending on the size of the tortellini.
  5. Add chopped turnip and heavy cream. Simmer on low heat for 2 to 3 minutes, or
    until turnips are tender. Raise the fire and serve.
