Cheesy Spinach Stuffed Chicken Breasts Recipe


For the Chicken Breasts:

  • 3 large chicken breasts, boneless, skinless (cut equal pieces)
  • sea salt to taste
  • 1 Tbsp olive oil
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp black pepper

For the Filling:

  • 4 oz cream cheese, cold
  • 1 Tbsp mayonnaise
  • 4 tsp garlic cloves, pressed
  • 1/4 tsp salt
  • 1 1/2 dishes baby spinach leaves, chopped
  • 1/4 dish parmesan cheese
  • 1/4 dish mozzarella cheese


  1. In a mixing bowl, mash cream cheese, garlic, and mayonnaise with a fork, then stir in
    mozzarella, chopped spinach leaves, and Parmesan until blended. Preheat oven to 425°F with
    rack in center.
  2. Cut slit 3/4 of the way through without cutting all the way through after lay chicken on a flat
    surface Stuff each chicken breast with 1/4 of the mixture and seal horizontally (make sure
    the chicken breast can lay flat on the sides for searing)
  3. Season the outside of the chicken breast all over with 3/4 tsp salt, 1/2 tsp pepper, 2 small
    cloves garlic chopped and 1/2 tsp paprika, or season to taste.
  4. in an ovenproof skillet, such as cast iron, or a large heavy-based skillet over medium heat, we
    will heat 1 1/2 tablespoons of olive oil, Fry the chicken for 4 minutes per side, until golden
    brown on each side.
  5.  After frying, preheat oven to 425°F and bake for 10-15 minutes, until thermometer inserts
    into thickest part of chicken logs at 165°F.
