Step 1: Preheat your oven to 350ยฐF (175ยฐC). Generously grease a standard non-stick 12-slot muffin tin with cooking spray, and set aside.

Step 2: Heat a large non-stick skillet over medium heat. Once hot, add in the olive oil, red pepper, green pepper, and yellow onion. Cook this for 5-7 minutes or until the peppers are tender, stirring frequently.
