- 2 chicken breasts, finely diced

- 1 Tbsp. chili powder
- ¾ cup barbecue sauce
- 1 13-ounce bag of tortilla chips
- 2 cups shredded cheese blend
- ½ red onion, finely sliced
- 1 tomato, diced
- 8 bacon strips, cooked and crumbled
- 2 Tbsp. parsley, finely chopped
- 1/2 cup sour cream
- 1 avocado, diced
Directions:
- Preheat the Oven:
- Preheat the oven to 350°F (175°C).
- Cook the Chicken:
- Heat the canola oil in a pan over high heat. Cook the diced chicken with kosher salt, black pepper, garlic powder, and chili powder for 2-3 minutes.
- Add Barbecue Sauce:
- Add the barbecue sauce to the chicken and cook until the sauce has reduced by about half, approximately 5 minutes. Remove from heat.
- Layer the Nachos:
- In a large skillet or oven-safe dish, spread out two large handfuls of tortilla chips. Layer with half of the barbecue chicken, followed by half of the shredded cheese, sliced red onion, diced tomato, crumbled bacon, and chopped parsley. Repeat the layering process with the remaining ingredients.

- Bake the loaded nachos in the preheated oven for 15 minutes or until the cheese is melted and bubbly.

- Drizzle sour cream over the nachos and sprinkle diced avocado on top.
