NEAPOLITAN FLAN IN AIR FRYER

This original Mexican recipe for flan napolitano is an incredibly rich and creamy creme caramel, a type of custard, that is steamed instead of baked.

Ingredients:
500ml whole milk
125g. sugar
3 eggs M
Lemon or orange zest
cinnamon stick


Preparation:
1. Heat the milk with the lemon or orange zest and the cinnamon stick.
2. When it starts to boil, remove from heat and let cool for about 30 minutes.
3. In a bowl, mix the eggs with the sugar. You have to do it gently and without using a mixer.
4. Add the milk and keep stirring until the sugar is completely dissolved.
5. Pass the mixture through a fine sieve to avoid any lumps that may have remained and eliminate the cinnamon and the lemon and orange zest
6. Cover the base of the mold with liquid caramel and carefully incorporate the flan mixture.
7. The flan must be cooked in a bain-marie. It means that the fryer will have to be filled with water until the mold is half covered. Therefore, the bucket has to be flat and suitable for adding water inside. First make sure that the brand, model and type of bucket is suitable for a bain-marie.
8. Cook the flan in the air fryer for 15 minutes at 170ºC. Those 15 minutes could be a few more. It is important to check how the cooking is going by poking the flan with a toothpick until we get it to come out clean.
9. Remove from the fryer and let rest in the fridge for 24 hours.
