ONE POT MEXICAN RICE CASSEROLE

Ingredients :

  • °1 pound ground beef
  • °1 small onion, diced
  • °Salt and pepper, to taste
  • °2 tsp taco season
  • °1 tsp garlic powder
  • °1 c long grain white rice
  • °1 1/2 c beef broth
  •  °1 can corn (15 ounces), drained
  • °8 ounces of tomato sauce
  • °1/2 cup salsa
  • °1 cup grated cheese Methods

Directions :

Cook ground beef and onion with salt and pepper to taste in a large skillet over medium-high heat until beef is no longer pink.

Drain grease if necessary.Returning pan to stove & sprinkling beef with garlic powder & taco season.Stirring in rice, broth, corn, tomato sauce & salsa.

Bring mixture to  boil. Covering, reduce heat &; simmer 18 to 20 min to rice is tender.

Topping with cheese & putting lid back on the pan for 2-3 min to  cheese is melt .
