Peanut Butter Brownie Bars

Peanut butter brownie bars with a Rice Krispie crust.

Ingredients

For the crust

  • 3 Cups Rice Krispies cereal
  • 2 Tablespoons Icing sugar
  • 3 Tablespoons Melted butter
  • 1 Vanilla bean pod

For the brownie

  • 57 Grams Butter
  • 115 Grams Dark chocolate, chopped
  • ½ Cup Sugar
  • 2 Eggs
  • ½ Teaspoon Vanilla extract
  • ¼ Cup + 1 tbsp of all-purpose flour
  • 1 Tablespoon Cocoa powder
  • 1 Pinch Salt

For the frosting

  • 1 Cup Smooth peanut butter
  • 100 Grams White chocolate, chopped
  • 2 Tablespoons Butter
  • ½ Teaspoon Vanilla extract

For the swirl

  • 100 Grams Dark chocolate, melted

Instructions

Step 1

Put the Rice Krispies and icing sugar in the food processor and pulse until you get very fine crumbs.


Step 2

Mix the vanilla with the melted butter and then add the cereal crumbs. Mix well.


Step 3

Line a square baking dish (22cm) with parchment paper. Then pour the cereal mixture and press to create a crust. Preheat the oven to 350F.


Step 4

Put the chocolate and butter in a small bowl and melt it in the microwave. Check & stir every 30 secs till it has completely melted.


Step 5

In medium bowl, whisk the eggs with the sugar and vanilla. Then add the chocolate mixture and mix.


Step 6

Then add the flour, cocoa powder and salt. Mix until it is all combined.


Step 7

Pour the brownie mixture carefully on top of the crust. Bake for 16 minutes. Then remove from the oven and set aside to cool.


Step 8

To make the frosting, place the peanut butter, white chocolate, butter and vanilla in a bowl. Melt it all together over a water bath.


Step 9

Taste it. I didn’t add extra sugar but if you like it a bit sweeter this is where you should add sugar to taste and stir until the sugar dissolves.


Step 10

Pour the peanut butter frosting over the brownie.


Step 11

Melt the dark chocolate for the swirl. Then pour lines of it over the peanut butter frosting.


Step 12

Make swirls using a toothpick.


Step 13

Place the brownie in the freezer for 20 minutes to set.


Step 14

Once the frosting has set. Soak a knife in hot water, dry it and then cut it into bars.
