Slow Cooker Beef Stroganoff

Slow Cooker Beef Stroganoff

Ingredients:

1.5 to 2 pounds (680 to 900 grams) beef stew meat, cut into bite-sized pieces
1 onion, finely chopped
3 cloves garlic, minced
8 ounces (225 grams) mushrooms, sliced
1 cup beef broth
1 tablespoon Worcestershire sauce
2 teaspoons Dijon mustard
1 teaspoon paprika
Salt and pepper to taste
1 cup sour cream
2 tablespoons all-purpose flour
2 tablespoons butter
12 ounces (340 grams) egg noodles or your preferred pasta
Chopped fresh parsley (optional, for garnish)

Directions:

Sear the Beef (Optional): While this is a slow cooker recipe, you can add extra flavor by searing the beef first. Heat a large skillet over medium-high heat. Add a bit of oil. Season the beef pieces with salt and pepper and sear them in the skillet until browned on all sides. This step is optional but recommended for extra flavor.
Prepare the Slow Cooker: Transfer the seared or unseared beef to the slow cooker. Add chopped onions, minced garlic, and sliced mushrooms on top of the beef.
Make the Sauce: In a separate bowl, whisk together the beef broth, Worcestershire sauce, Dijon mustard, paprika, salt, and pepper. Pour this mixture over the beef and vegetables in the slow cooker.
Cook in the Slow Cooker: Cover the slow cooker and cook on LOW for 6-8 hours or on HIGH for 3-4 hours. The beef should become tender, and the flavors will meld together.
Prepare the Pasta: About 30 minutes before the stroganoff is done cooking, prepare the pasta according to the package instructions. Drain and set aside.
Thicken the Sauce: In a small saucepan, melt the butter over medium heat. Stir in the flour to create a roux. Cook for a minute or two to remove the raw flour taste. Gradually whisk in about 1/2 to 1 cup of the hot liquid from the slow cooker. Continue whisking until the mixture thickens.
Add the Sour Cream: Stir the sour cream into the thickened sauce mixture until well combined. This helps create the creamy texture of the stroganoff.
Combine the Pasta and Sauce: Pour the sour cream sauce mixture into the slow cooker with the beef and mushrooms. Stir everything together until the sauce is evenly distributed.

Serve your slow cooker beef stroganoff over the cooked pasta. Garnish with chopped fresh parsley if desired.
