Taco Hashbrown casserole

Ingredients:

  • 1 pound ground beef or turkey
  • 1 packet (1.25 oz) taco seasoning mix
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn kernels, drained
  • 1 can (10 oz) diced tomatoes with green chilies, drained
  • 1 package (30 oz) frozen shredded hash browns
  • 2 cups shredded Mexican cheese blend
  • 1 cup sour cream
  • 1 cup salsa
  • Optional toppings: sliced green onions, chopped fresh cilantro, diced avocado, sliced jalapeños, sour cream, salsa

Instructions:

  1. Preheat your oven to 375°F (190°C). Grease a 9×13 inch baking dish.
  2. In a large skillet, cook the ground beef or turkey over medium heat until browned, breaking it up with a spoon as it cooks. Drain excess fat if necessary.
  3. Stir in the taco seasoning mix, black beans, corn, and diced tomatoes with green chilies. Cook for another 2-3 minutes until heated through and well combined. Remove from heat.
  4. Spread half of the frozen hash browns in an even layer on the bottom of the prepared baking dish.
  5. Spoon the beef mixture over the hash browns, spreading it out evenly.
  6. Sprinkle 1 cup of shredded cheese over the beef mixture.
  7. Layer the remaining frozen hash browns on top of the cheese.
  8. In a small bowl, mix together the sour cream and salsa. Spread this mixture evenly over the top layer of hash browns.
  9. Cover the baking dish with foil and bake in the preheated oven for 40 minutes.
  10. After 40 minutes, remove the foil and sprinkle the remaining shredded cheese over the top. Return the dish to the oven and bake uncovered for an additional 10-15 minutes, or until the cheese is melted and bubbly and the casserole is heated through.
  11. Remove from the oven and let it cool for a few minutes before serving.
  12. Serve the taco hashbrown casserole hot, garnished with your favorite toppings like sliced green onions, chopped fresh cilantro, diced avocado, sliced jalapeños, sour cream, or salsa.
