PINEAPPLE JUICE CAKE

I knew how much we loved the Orange Juice Cake that I shared a few weeks back, but had no idea yโ€™all were going to love it as much as you do. Momโ€™s been making that thing for years and Iโ€™ve just always enjoyed it so much, but the comments and emails Iโ€™ve gotten prove yโ€™all are just as crazy about it!

One of the comments that I got was from Cheryl Griffis. She asked if I had ever swapped the orange juice out for pineapple juice. โ€œGENIUS,โ€ I thought. So I got in the kitchen and set out to do just that.

I made a few tweaks to capitalize on all that delicious pineapple flavor and boy did it turn out amazing!! I think this one might even edge out the orange juice version, but Iโ€™ve always been a huge pineapple fan.

The super moist cake is infused with pineapple flavor in the batter and the butter-pineapple glaze that it gets soaked in amps that pineapple flavor up even more!

I took these photos and may have eaten 2 slicesโ€ฆ okay, 3. If youโ€™re a fan of the orange juice version and love pineapple, I bet youโ€™re going to devours this. Seriously. Yโ€™all enjoy!

 

Ingredients:

For the Cake:

  • 2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 cup pineapple juice
  • 2 eggs
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract

For the Pineapple Glaze:

  • 1/2 cup granulated sugar
  • 1/2 cup pineapple juice
  • 1/4 cup unsalted butter
  • 1/2 teaspoon vanilla extract

Instructions:

  1. Preheat Oven: Preheat your oven to 350ยฐF (175ยฐC). Grease and flour a 9×13-inch baking pan.
  2. Prepare Batter: In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  3. Combine Dry Ingredients: In a separate bowl, sift together the all-purpose flour, baking powder, and salt.
  4. Alternate Mixing: Gradually add the dry ingredients to the creamed mixture, alternating with the pineapple juice, beginning and ending with the dry ingredients. Mix until well combined.
  5. Bake: Pour the batter into the prepared baking pan and spread it evenly. Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  6. Prepare Pineapple Glaze: While the cake is baking, prepare the pineapple glaze. In a small saucepan, combine the granulated sugar, pineapple juice, and unsalted butter. Bring to a boil over medium heat, stirring constantly. Reduce the heat to low and simmer for 5 minutes. Remove from heat and stir in the vanilla extract.
  7. Glaze Cake: Once the cake is done baking, remove it from the oven and immediately poke holes all over the surface using a fork or toothpick. Pour the warm pineapple glaze evenly over the hot cake, allowing it to soak in.
  8. Cool and Serve: Allow the cake to cool completely in the pan on a wire rack. Once cooled, slice and serve the Pineapple Juice Cake. Enjoy!
