
Ingredients:
500g (1 lb) chicken gizzards, cleaned
2 cups buttermilk
1½ cups all-purpose flour
½ cup cornstarch
1 tsp garlic powder
1 tsp onion powder
1 tsp paprika
Salt & pepper to taste
Oil for frying
Instructions:
Soak gizzards in buttermilk for at least 1–2 hours (or overnight) to tenderize.
In a bowl, mix flour, cornstarch, and seasonings.
Remove gizzards from buttermilk and dredge in flour mixture.
Heat oil to 175°C (350°F).
Fry gizzards in batches for 4–6 minutes or until golden brown and crispy.
Drain on paper towels and serve hot with hot sauce or ranch.
