Peach cobbler Pound Cake

Ingredients filling :


ยฐ 3 large peaches or 2 canned stone peache

ยฐ 4 tbsp butter

ยฐ 1/2 c brown sugar

ยฐ 1/2 c white sugar

ยฐ 1 t vanilla extract

ยฐ 2 t cinnamon

ยฐ 1 t nutmeg

ยฐ 1/2 c orange juice

ยฐ 2 t cornstarch

+Ingredients cake batter:

ยฐ 3 c flour

ยฐ 3 c sugar

ยฐ 5 egg

ยฐ 1 1/2 c butter

ยฐ 2 t of cinnamon

ยฐ 1 t of nutmeg

ย ยฐ 1 teaspoon of baking powder

ยฐ 1 cup whole milk

ยฐ 1 teaspoon of vanilla

ยฐ 1 t almond extract


Methods :


Preheat oven 350. Placing all ingredients for the peach filling inย  saucepan and slowly bring to a boil. Once it starts to thicken, turn off and let cool.

Next, butter and flour a large tube tin set apart. In a bowl, combine flour, baking powder, cinnamon, nutmeg and set apart. Inย  bowl, cream sugar and butter then add the eggs 1 by 1.Adding vanilla and almond extracts.

Alternate flour mixture and milk in the batter until well blended. Do not overmix! Next, place half of the batter in the pan, then add the peach mix around layer, leaving some to top the cake at the end. Placing rest of the dough on the peach mixture and put in the oven for 1 hour 15 minutesโ€ฆ use the toothpick method to detect cooking. Leave to cool for 30 min then invert onto a platter also garnish with the remaining peach cobbler filling.
