INGREDIENTS
For the refried beans:
1 diced onion
4 roughly chopped cloves of garlic
1 cup pinto beans
1 cup chicken stock
1 tbsp cumin
1 tsp cayenne pepper
1 tsp smoked paprika
1 tbsp lime juice
For the red enchilada sauce:
2 tbsp olive oil
2 tbsp all purpose flour
1/4 cup paprika
2 cups chicken stock
1/2 tsp garlic powder
For the Meat:
1 lb ground beef
1 tsp paprika
1 tsp oregano
1 tsp cumin
1 tsp onion powder
1 tsp garlic powder
1 tsp salt and pepper
1/2 cup shredded Mexican blend of cheese
accoutrements:
4 flour tortillas
1 cup cooking oil
1 diced tomato
1 cup shredded Mexican blend cheese
1/4 cup chopped green onions
INSTRUCTIONS
Start with the refried beans:
In a saucepan or pot heat 1 tablespoon of olive oil.
Add the onions and the garlic and saute on medium heat for about 5 minutes or until the onions become soft.
Add the pinto beans and chicken stock and turn to high. When The mixture starts to boil, add the lime juice and mix well.
Turn off the heat and use the back of a fork or an immersion blender, puree or mash up the pinto beans. Season with salt and pepper and set aside.
For the the enchilada sauce:
In a saucepan or pot, add the olive oil on medium high heat.
Whisk in the flour and let it cook together for 2 minutes or until the flour starts to bubble.
Add the paprika and mix well, then add the chicken stock to combine.
Season with garlic powder and salt and pepper and set it aside.
For the beef mixture:
Add the ground beef to a medium high frying pan for about 5 minutes breaking up the meat with a wooden spoon or spatula.
In a small bowl, combine all the seasoning to create a taco seasoning blend.
Add all the seasoning to the ground beef and mix well.
When there is no longer any pink beef showing, mix in the shredded cheese and set aside.
assembly:
For the fried tortillas, heat the cooking oil in a large frying pan on medium heat. Using your knife, poke holes in the tortillas so they don’t puff up while cooking.
Fry for 30 seconds to a minute on both sides or until they become golden brown and crispy. Set the tortillas on a wire rack and season with salt and pepper.
Add half the refried beans to one of the tortillas and spread it over the entire thing. Cover the refried beans with half the ground beef mixture.
Place another fried tortilla on top pressing it down. Spread half the enchilada sauce on top of the top tortilla. Add half the remaining cheese on top of the enchilada sauce.
Place the pizzas in the oven on broil for 30 seconds or until the top cheese starts to melt. Then take it out of the oven.
Garnish the pizza with the diced tomatoes, and chopped green onions.
