I made some modifications to a typical Southwest breakfast casserole recipe. I love this recipe because I can make it up the night before and bake it in the morning. Egg casseroles can often be a bit dry, but this one comes out moist and delicious every time!
-I have this same casserole dish that my sister–in-law gave me I think 2 years ago. It is by Rachael Ray and I’m pretty sure she got it at Wal-Mart. She also gave me a red one in a different shape the year before and I love them. I haven’t checked recently, but I have seen them in the past at Wal-Mart. I have taken casseroles, etc. in them to potlucks. I cover with Press & Seal (by Glad, I think) then put them in a casserole carrier and they work great. I always put a name & address sticker on the dish so no one will run off with my Rachael Ray dish that I ♥.
-Bill try the shop/s that carry Rachael Rae’s products. I have seen that style of dish on her cooking show where she cooks up seven meals for the week. Sorry can’t remember the name of the show.
