Ingredients:

For the muffins:

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3 ripe bananas, mashed
  • 3/4 cup granulated sugar
  • 1/3 cup unsalted butter, melted
  • 1 egg
  • 1 teaspoon vanilla extract

  • 1/4 cup all-purpose flour
  • 1/4 cup brown sugar
  • 1/2 teaspoon ground cinnamon
  • 2 tablespoons unsalted butter, cold and cubed

For the glaze:

  • 1/2 cup powdered sugar
  • 1-2 tablespoons milk or cream
  • 1/2 teaspoon vanilla extract

Instructions:

  1. Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease with non-stick cooking spray.
  2. In a large mixing bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In another bowl, combine the mashed bananas, granulated sugar, melted butter, egg, and vanilla extract. Mix until well combined.
  4. Add the wet ingredients to the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are okay.
  5. In a small bowl, prepare the streusel topping by combining the flour, brown sugar, and ground cinnamon. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
