If you’re a lemon lover like me, check this simple lemon-flavored cake out !! Seriously, bring this with you when invited to dinner and it’ll be the hit of the day !!! This sunshine cake is quick but impressive to put together on the cake stand as well as made with only simple ingredients.
WHAT YOU NEED :
– (4) eggs, separated
– ⅓ cup lemon juice
– 1 tsp lemon zest
– 1 tbsp butter
– 1 ½ cups white sugar
– ½ cup sifted all-purpose flour
– ½ tsp salt
– 1 ½ cups milk
PREPARATION :
STEP 1 :
First of all, beat together the egg yolks, lemon juice, lemon rind, and butter or margarine until the color is thick and lemon. Immediately, combine sugar, flour, and salt together and add milk to the yolk mixture in turn and beat well after each addition.
STEP 2 :
Make sure to beat egg whites till they are stiff. Using an electric mixer at low speed, mix egg whites into the batter. Once done, you can pour into a baking dish of 8 inches in line.
STEP 3 :
You’ll want to add and place a pan of hot water in the oven, and put the baking platter in the tub. Finally, bake at about 350 degrees F (175 degrees C) for 45 minutes.
RECIPE NOTES :
It’s wise to roll the lemon on the counter and apply a mild pressure to loosen the membranes before you cut it in half so as to get the best of your lemon. if you do not have a citrus squeezer, you’ll want to add and place a small strainer over the bowl and use a fork, twist it back and forth, to extrude as much juice as possible from the lemon.
Always remember to sift powdered sugar, as it creates small clumps and can not evenly blend in the lemon juice. Continue stirring, as the mixture boils, to ensure smooth glazing.
