Ingredients:
- 4 large baking potatoes
- 1 lb (450 g) ground beef
- 6 slices bacon, cooked and crumbled
- 1 cup shredded cheddar cheese (or your favorite cheeseburger cheese)
- 1/2 cup BBQ sauce (plus extra for drizzling)
- 1/4 cup diced onions (optional)
- 2 green onions, chopped (for garnish)
- Salt and pepper to taste

Instructions:
- Bake the potatoes:
Preheat oven to 400°F (200°C). Wash and dry potatoes, then prick them a few times with a fork. Rub lightly with olive oil and sprinkle with salt. Bake directly on the oven rack for about 45-60 minutes until tender. - Prepare the beef filling:
While potatoes bake, heat a skillet over medium heat. Cook ground beef until browned, breaking it up with a spoon. Drain excess fat. Add diced onions if using, salt, and pepper, then stir in BBQ sauce. Cook for 2-3 more minutes. - Hollow out the potatoes:
When potatoes are cool enough to handle, slice off the top third lengthwise. Scoop out most of the potato flesh, leaving about a 1/4-inch shell so it holds its shape. Reserve scooped-out potato for another use or mash. - Assemble the volcanos:
Mix the scooped potato flesh with the BBQ beef mixture and half the shredded cheese. Spoon the mixture back into the potato shells, mounding it up like a little volcano. - Add bacon and cheese:
